About HACCP
Hazard Analysis and Critical Control Point (HACCP) is an internationally recognised system for reducing the risk of safety hazards in food. A HACCP System requires that potential hazards (biological, chemical or physical hazards) are identified and controlled at specific points in the process. HACCP is critical requirement for your facility compliance with applicable national and international food safety legislations.
Developing and Implementing a HACCP System requires that both Prerequisite Programs and HACCP Plans. Prerequisite programs (PRP) are implemented in the facility to control hazards in the environment, preventing contamination of the product and ensure a hygienic environment and good manufacturing processes (GMPs) for personnel that reduce the associated risk of of the food product.
HACCP Plans are prepared for each process/product and identify possible hazards and controls in place to make sure the hazards are eliminated or controlled to ensure acceptable levels of the food product. HACCP is one of the core components of all food safety certifications viz. SQF, ISO 22000, BRC, IFS etc.
